Food & Beverage Trends and Tips for Going Green and Saving Money

Marge RisingerAlthough Marge Risinger is not a registered dietitian, she has been planning meetings for over 25 years and teaching food and beverage classes for 15 years.  She also planned meetings for the California Dietetic Association for 18 years.  Her love of food has definitely influenced her menu planning, and trying to eat healthier is a focus also.  She realizes that you cannot change the eating habits of people in two or three days and over extending your style of eating may not be for everyone, but there are a few little changes that can be made to keep people awake, alert and still happy.  Spend the afternoon working together with menus, thoughts from the chef and tips from the speaker to solve today’s problems in planning F&B functions.

First of all:

  1. Trends
    • What are the Trends?
    • Do they cost more?
    • Can they be healthy?
    • Can they be satisfying?
    • What can we provide to satisfy the sophisticated palate?
    • Learn what is taking place around the country in the latest and greatest trends.
  2. Budgets
    • What can we do to please most everyone, satisfy dietary needs and still stay within budget?
    • How can we live in our new Green Environment, serve fresh, healthy foods and still keep the costs down?
    • Get at least 15 cost saving tips from Marge and others in this seminar to stretch the budget, satisfy the diets and save the planet.  Not such a big job, huh?
  3. Green
    • Is it really possible to do our part to save the Planet and not kill our budget?
    • Can we take some small steps to make big progress?
    • What kinds of things are available today and what is coming?
    • What are the hotels doing?  What can we do?

Marge’s 25+ years of planning meetings and 15 years of teaching Food & Beverage for Meeting Planners will help you discover new ways of menu planning and most of all, discover why we choose certain items.

Presenter's Bio:
For 19 years, Marjorie was a Partner in the firm of Rosenberg & Risinger, The Meeting Professionals, which merged with another company in 2007.  Marjorie is now consulting, teaching and speaking.    

Marjorie has planned meetings for many associations, corporations and non-profit groups over the past 30 years.  She has taught Food & Beverage courses at Cal State Long Beach for the past twelve years and also Cal State Dominguez Hills, Marge is now the coordinator of the Meeting Planning and Special Event Planning Certificate program at California State University at Long Beach and is on the advisory board of the certificate program at California State University at Dominguez Hills and has been instrumental in the development of that program.  She is a frequent speaker at industry events, such as Affordable Meetings, EMCVenues and has been a Platinum speaker for MPI. She has written articles for many industry magazines. 

As an active member of MPI for 25 years, Marge is a past president of the Southern California Chapter and received the “Planner of the Year” award from the chapter in 1990 and the Lifetime Achievement Award in 2004.  She is still very active in MPI and pioneered a Seminar in The Basics of Meeting Planning for MPISC and Hyatt Hotels which is in it’s 21st year, raising money for the chapter’s scholarship program.
